Grilled Hearts of Palm Salad Recipe

Ingredients:

For the Salad:

  • 1 can hearts of palm, drained, cut into thick slices, and patted dry

  • 2 tbsp vegan butter (for grilling)

  • 1 tbsp jerk seasoning

  • 4 cups mixed lettuce greens (your choice)

  • 1 red bell pepper, thinly sliced

  • ¼ cup pickled shallots (homemade or store-bought)

  • ¼ cup pickled jalapeños (homemade or store-bought)

  • 2 green onions, chopped (for garnish)

  • Vegan bacon (follow package instructions) – I used Upton's Naturals

  • 2 soft-boiled eggs (6-minute eggs)

For the Dressing:

  • ¼ cup almond milk

  • 1 tbsp apple cider vinegar

  • 2 tbsp Kewpie mayo (or vegan mayo as a substitute)

  • 2 tbsp dill aioli (or substitute with fresh dill)

  • 1 clove garlic, minced

  • 1 small shallot, minced

Instructions:

1. Grill the Hearts of Palm:

  • Heat a grill pan (I used a cast iron) over medium heat and add the vegan butter.

  • Once the butter is melted, add the patted-dry hearts of palm slices and sprinkle generously with jerk seasoning.

  • Grill for about 4-5 minutes on each side until slightly charred and golden. Remove from heat and set aside.

2. Prepare the Salad:

  • In a large salad bowl, toss together the lettuce greens, red pepper, pickled shallots, and pickled jalapeños.

  • Cook the vegan bacon according to the package instructions. Crumble it into small pieces and add to the salad.

  • Slice the soft-boiled eggs in half and place them on top of the salad.

  • Garnish with freshly chopped green onions.

3. Make the Dressing:

  • In a small bowl, whisk together almond milk and apple cider vinegar. Let it sit for 2-3 minutes to thicken slightly.

  • Add the Kewpie mayo (or vegan mayo), dill aioli (or fresh dill), minced garlic, and minced shallot. Whisk until smooth.

  • Season with salt and pepper to taste.

4. Assemble and Serve:

  • Drizzle the dressing over the salad and toss gently to combine all the flavors.

  • Top with the grilled hearts of palm and serve immediately.

Pro Tips:

  • For a spicier kick, sprinkle red pepper flakes on top of the salad.

  • To enhance the smokiness of the grilled hearts of palm, use a charcoal grill or keep with the cast iron for even heat distribution.

  • If you're aiming for a completely vegan dish, swap out the eggs for avocado slices.
